Born in East Timor (then part of Indonesia) and shaped by the kitchens of Bali, Chef Tommy brings depth, soul, and storytelling into every dish. With over a decade of experience across hotels, restaurants, and wellness kitchens, his food carries the essence of Balinese culture, where cooking is not just a skill but a spiritual offering.
Tommy’s food is more than a meal — it’s a cultural experience. His pop-up dinners, intimate classes, and retreat collaborations invite guests to slow down, reconnect with their senses, and rediscover the joy of sharing food rooted in tradition, care, and community.
Having cooked in both Bali and Australia, Tommy adapts his heritage with heart, always honouring tradition while creating space for connection.
